What comes to mind when you think of tomato soup? I think of my grandma, and I think of grilled cheese, and I think of rainy days. I also think of Campbell’s tomato soup in a CAN! Making this soup is just a few more steps than opening up a can of soup, and you’ll be able to taste the difference!

Having grilled cheese with tomato soup is fun for a rainy day or any day, and you can also add some homemade croutons made with Bakerly brioche, or any bread you have handy. Or, instead of grilled cheese, how about making Double Cheese Roll-Ups!

Now let’s get started making this easy tomato soup so you can have it for lunch!

Get your ingredients ready:
3 TB olive oil
2 TB butter
1/2 large onion
2 cloves garlic
2 TB flour
2 tsp dried basil (or 2 TB fresh)
2 tsp dried parsley (or 2 TB fresh)
4 cups of broth (vegetable or chicken)
1 can (56 oz) crushed tomatoes
2 tsp sugar
1/2 tsp salt
1/4 tsp pepper

So How Do You Make Tomato Soup?

First step is to heat up the olive oil and butter on medium-low heat in a large soup pot.

Once the butter melts and you see little bubbles, then add your onion. Cook the onion for about 6 minutes, stirring occasionally.

You’ll add the garlic next and saute it for 2 minutes, or until it gets soft (not burnt). Add the flour, and cook another 2 minutes.

Add the herbs next, and cook another 2 minutes. Next, add the broth (a whole 32 oz container), then the tomatoes, sugar, salt and pepper.

Then cover the pot and heat it on low for 30 minutes or so.

Once the soup has cooked, and cooled a bit, use your immersion blender to puree it right in the pot. If you’re using a blender, please wait until the soup has cooled so no one gets hurt!
